Colebridge, Missouri is a fictional town located along the Missouri River. As a Missouri native and author, I have traveled the state enjoying its beauty and quality of life. It has a historic Main Street lined with specialty shops, quaint eateries, and professional businesses. Its parks and neighborhoods are out of a story book!
Colebridge is full of interesting characters. Some still reside here, and some remain only in spirit! As you get to know them, they may resemble folks in your own community.

SYLVIA'S MEATLOAF (ANNE'S FAVORITE) |

2 eggs beaten |
1 cup milk |
|
2/3 cup cracker crumbs |
1 1/2lbs. ground beef |
|
1/2 cup chopped onion and green pepper
| 1 tsp. salt |
|
1/8 tsp. pepper |
1 tsp. salt |
 |
|
PIQUANT SAUCE |
|
6 TBLS. Brown sugar |
1/2 cup catsup |
|
1/2 tsp. nutmeg |
2 tsp. dry mustard |
 |
|
To prepare meatloaf, beat eggs in small bowl. Add milk and crumbs. Stir together with fork. Set aside. Combine ground beef, onions and peppers with seasonings. Add milk and crumb mixture and stir well. Pack meatloaf into a greased pan. To prepare sauce, combine all ingredients and beat together with a fork. Spread over meatloaf. Bake 350 degrees for 1 hour. |

SYLVIA'S POPULAR LASAGNA |

Meat Mixture |
|
1 lb. ground beef |
1 minced garlic clove |
|
1 tsp. parsley flakes |
1 tsp. basil |
|
2 tsp. salt |
1 - 12 oz. can tomatoes |
|
1 - 6oz can tomato paste |
1 tsp. salt |
 |
|
Cheese Mixture |
|
2 - 12 oz. cartons of cottage cheese |
2 beaten eggs |
|
2 tsp. salt |
1/2 tsp. pepper |
|
2 TBLS parsley flakes |
1/2 cup parmesan cheese |
 |
|
Cook 1 - 10oz. pkg. of lasagna and drain in cold water. Slice mozzarella or American cheese. In 9x13 pan, place layer of noodles - half of cheese mixture - sliced cheese - half of meat mixture - repeat. Bake 30 minutes at 375 degrees. |

SYLVIA'S PEACH COBBLER |

Arrange 3 cups sliced fresh peaches in a greased 8 1/2 or 9 inch round baking dish. Mix 1 cup sugar, 1 tsp. grated lemon peel, 1 tsp. lemon juice, 1/4 tsp almond extract; sprinkle over. If using canned or frozen peaches use 1/4 cup sugar. Place in hot oven at 400 degrees. Sift together; 1 1/2 cup sifted enriched flour, 1 tsp. sugar, 3 tsp. baking powder and 1/2 tsp salt. Cut in 1/3 cup Crisco. Beat 1 egg; combining with 1/2 cup milk. Add liquid all at once to flour mixture and stir just enough till flour is moistened. Remove peaches from oven. Spoon the dough over the hot peaches; spreading it lightly with the back of the spoon. Sprinkle with 2 TBLS. sugar. Bake in hot 400 degree oven for 30 minutes, or until golden brown. |

JULIA'S CHILI |

1 lb. ground beef |
1 cup onion, minced |
|
2 cloves garlic minced |
1 cup chopped celery |
|
1 cup chopped green peppers |
1 can stewed tomatoes |
|
24 oz. V_8 juice vegetable |
1 tsp. chili powder |
|
1/2 tsp. ground cumin |
1 1/2 tsp. salt |
|
1/4 tsp. hot pepper sauce |
1/4 tsp. pepper |
|
12 oz. red kidney beans drained |
|
 |
|
Cook beef in skillet until well done. Drain on paper towels and return to skillet. Add onions and garlic. Saute' until onions are translucent, about 5 minutes. Add beef and all remaining ingredients, except the kidney beans. Bring to a boil. Reduce heat, cover, and then simmer for about 30 minutes. Stir in kidney beans and cook until well heated. |

SUE'S BROWNIES (from Grandmother Davis) |

1/2 cup unsweetened chocolate |
3/4 cup shortening |
|
2 cups sugar |
4 eggs |
|
1 1/4 cups flour |
1 tsp. baking powder |
|
1 tsp. salt |
1 tsp vanilla |
 |
|
Mix all ingredients thoroughly. Spread in a greased 13x9x2 pan. Bake at 350 degrees until top has a dull crust (30-35 min.) Let cool before cutting. |

SUE'S CHRISTMAS SUGAR COOKIES |

2 cups sifted flour |
1/3 cup oil |
|
1 1/4 tsp. baking powder |
3/4 cup sugar |
|
1/4 tsp. salt |
1 tsp. vanilla |
|
1 egg, plus milk to make a 1/2 cup |
|
 |
|
Sift flour, baking soda, and slat into a bowl. Add oil, blending with a fork or pastry blender. Beat sugar, vanilla and egg milk mixture together until light and fluffy. Stir into flour mixture. Chill about 1 hour. Roll out on a floured board to your desired thickness. Begin cutting shapes. Bake in a 400 degree oven about 9 minutes. Makes about 3 dozen. Decorate as desired. |
